Apple and Date Charoset Serves 12-20 For all ingredients, please consider using those that are grown organically. |

| 2 1/2 cups | medjool dates, pitted |
| 1/2 cup | almonds, raw |
| 1 cup | pistachios, unsalted |
| 3 | apples, granny smith and/or fuji, cored and quatered |
| 1 | whole orange, with peel, quartered |
| 3/4 cup | dry sherry or sweet wine |
| 1/4 cup | apple cider vinegar |
| 1 teaspoon | ground cinnamon |
| 1-2 tablespoons | freshly squeezed lemon juice |

Combine all of the ingredients in the bowl of a food processor. Pulse the ingredients for a chunkier consistency. Let it whirl for a finer pureed consistency. I like it with a bit a texture, but not too chunky (see photos). Either way it will be delicious. Store in an airtight container in the refrigerator for up to 1 week. |
