Oven Baked Tortilla Chips
Tortilla chips-check ingredients and purchase those made with only the basics, Trader Joes and Whole Foods have great options
water, olive oil, or lime juice
  sea salt
  chili powder or cayenne (optional)
Preheat oven to 350 F.
Use any stale or fresh tortillas. They all work really well, but I have to say that my personal favorite for baking is the brown rice. This is not because they are gluten free, but because they seem to have the best flavor and texture in the end. The corn tend to be the crunchiest due to their thickness, and the whole wheat flour are the most flaky.
Stack them on top of one another as they are in the packaging. Use a large chopping knife to cut the stacks in half. Then make another cut perpendicular to the first half. Then make another 2 cuts dividing the quarters into halves leaving you with 8 triangles per round.
Lay the triangles onto a parchment lined baking sheet. It is fine to overcrowd them.
Use your fingers or an oil sprayer to sprinkle the tortillas with either water, olive oil, or lime juice. Then sprinkle the sea salt over them. If you want to make them a little spicy add a tiny bit of cayenne or chili powder.
Put them into the oven and bake for about 10 minutes. When they are ready, they will be golden brown and crisp.
Remove the tray from the oven and allow to cool. Repeat if you have more.
Store in an airtight container for up to a week.
